When I first tasted the Japanese Sweet potato I was surprised by how sweet it was. Even if I first oven roasted them (see recipe here), I later on decided to give them another use to fully take advantage of this natural sweetness. We were having some rainy days and I wanted to eat something hot so I decided to make waffles and accompany them with an orange compote. My first intention was to puree the compote to make it like a sauce but then I liked the idea of leaving orange chunks. I love how well it tastes, and I think it could be used to accompany ice cream too. Warm compote and Ice cream, great idea, I’ll keep it in mind.
As a note: I add only a little of Muscovado Sugar, but I highly encourage you to try the batter before start cooking. The sweet potatoes I used where extremely sweet, but sweetness varies with ripeness and type.

Vegan Sweet Potato Waffles with Orange Sauce
- 9.1 oz of steamed sweet potatoes (about 12.2 oz fresh)
- 1 cup of water
- 2.8 oz Oats flour
- 3.5 oz of Plain Flour
- 1 tablespoon Muscovado sugar
- 1 teaspoon baking soda
- 1 tablespoon white vinegar
- 1 tablespoon vanilla extract
- 4 oranges
- 1 tablespoon Muscovado Sugar
- 1/4 cup Orange Juice or Orange liquor
- Juice of a lemon – 3 tablespoons
- 1 dried cardamom pod
- 1 star anise fruit
- 2 teaspoon corn starch
