When I first tasted the Japanese Sweet potato I was surprised by how sweet it was. Even if I first oven roasted them (see recipe here), I later on decided to give them another use to fully take advantage of this natural sweetness. We were having some rainy days and I wanted to eat something hot so I decided to make waffles and accompany them with an orange compote. My first intention was to puree the compote to make it like a sauce but then I liked the idea of leaving orange chunks. I love how well it tastes, and I think it could be used to accompany ice cream too. Warm compote and Ice cream, great idea, I’ll keep it in mind.

As a note: I add only a little of Muscovado Sugar, but I highly encourage you to try the batter before start cooking. The sweet potatoes I used where extremely sweet, but sweetness varies with ripeness and type.

Ingredients

For the Waffles
  • 9.1 oz of steamed sweet potatoes (about 12.2 oz fresh)
  • 1 cup of water
  • 2.8 oz Oats flour
  • 3.5 oz of Plain Flour
  • 1 tablespoon Muscovado sugar
  • 1 teaspoon baking soda
  • 1 tablespoon white vinegar
  • 1 tablespoon vanilla extract
For the Orange Compote
  • 4 oranges
  • 1 tablespoon Muscovado Sugar
  • 1/4 cup Orange Juice or Orange liquor
  • Juice of a lemon – 3 tablespoons
  • 1 dried cardamom pod
  • 1 star anise fruit
  • 2 teaspoon corn starch

Preparation

Step 1 For the Waffles: peel the Sweet Potatoes, cut them in large pieces and then steam them until soft.
Step 2 Process the sweet potatoes and add the water to make a runny puree.
Step 3 Transfer the puree to a bowl and add the plain flour, the oats flour, the sugar and the baking soda.
Step 4 Mix well and then add the white vinegar and the vanilla essence.
Step 5 Preheat the waffle maker and follow the manufacturer’s instructions to cook them.
Step 6 For the Orange Compote: peel the oranges and then cut in slices.
Step 7 In a pot put the Muscovado sugar, the orange juice or liquor and the lemon juice.
Step 8 Cook until the sugar has melted, then add the cardamom and the star anise.
Step 9 Bring to boil, and boil for one minute. Add the orange slices and cook for another 3 minutes.
Step 10 Add the corn starch and cook until it thickens. Before serving remove the cardamom and the star anise.
Step 11 Assembly: Serve the waffles with the warm orange compote.
