I used to dislike royal icing, I always associated it with a strong lemon flavor. Luckily with this recipe you can add any flavoring or juice of your choice. If you want to use juice, switch the first 3 teaspoons of water for juice or vegetable milk for a different taste, you can even use lemon juice. As I said in the introduction, what I really like about this icing is that it doesn’t break when you bite it or, in the case of a pound cake, when you cut it.

As you can see my piping skills are pitiful, yet it doesn’t crumble and keeps the colors really well. Be sure to keep this recipe because is the only one you’ll need to decorate cookies!

Ingredients

  • 1 cup of powdered sugar
  • 3 teaspoons of vegetable milk or water
  • 2 teaspoons of liquid glucose syrup
  • 1/4 teaspoon of vanilla extract (optional)
  • Food coloring

Preparation

Step 1 In a bowl mix the powdered sugar with the water, it may seem odd but the sugar will absorb it and a thick paste will form.
Step 2 Add the glucose and the vanilla extract if using.
Step 3 And voilà! is ready! divide it in the amount of colors you are going to be using and remember that you need a thicker royal icing for delineating the decor and then you can add more water to make it more liquid for filling.
