Vegan Red Bell Pepper Empanadas

Empanadas are a classic of Argentinean cuisine. These red bell pepper empanadas are not traditional and came from my own inspiration and love for the taste of roasted pepper bells. As any other empanadas, they are ideal for a picnic or a get-together with friends. Skip to the recipe.

Each region in Argentina has its own traditional recipe and it is usually meat based. However nowadays you can find empanadas with a lot of different fillings. While it is not difficult to find vegetarian ones on any major place selling empanadas, it is very hard to find vegan ones. So we have to make our own.

If you think that making the dough is too much work, you can buy pie crust and cut circles from it. I use a reversed bowl and cut along the borders with a serrated knife but if you have a round cutter with the appropriate size you can use it.

Vegan Red Bell Pepper Empanadas

  • 1.1 lb of red bell peppers
  • 1 medium onion
  • 2 garlic cloves
  • 12 discs of vegan empanada dough
Vegan Red Bell Pepper Empanadas


Step 1 Char the peppers, rotating them with tongs. Be careful not to over do it because they might burnt to a crisp!
Step 2 Let them cool a little bit and remove the skin with your fingers. Wash them and cut around the top of the pepper and remove the stem and seeds.
Step 3 Cut them in one-inch by half-inch chunks. Chop the onion and garlic cloves.
Step 4 Sautee the onion for one minute, add the garlic and cook for another minute, finally add the red bell peppers and cook for one more minute. Add salt and pepper to taste and let it cool.
Step 5 Assembly: Take one empanada dough disc and wet half of the border. Place one tablespoon of the filling in the middle.
Step 6 Fold the disc so as to have a semi circle.
Step 7 Using a fork press the borders to avoid the filling from spreading. There are other ways to close the empanada as you can see in the Step 7 of our vegan corn empanadas recipe.
Step 8 Place in a baking sheet.
Step 9 Cook in the oven until golden (about 15 minutes).
Step 10 Remove and let cool a bit before eating.
