This might as well be a blog about vegan bakery, I just have a sweet tooth! Besides when I first thought about going vegan my main concern was “how am I going to bake?”. Luckily it is extremely easy. I’m deeply thankful to all of those vegan before us who developed the first recipes and found the first swaps! Thank you!.
This cake is amazing, the crumbs are delicate and the pears add a fresh flavor, without them the cake might be too heavy. Of course, it is a matter of taste! I think that it could be baked, with or without pears, in a square pan and then cut in small squares and served as petits fours and it would be amazing. I just thought of it, I’ll try it and I’ll let you know.
As for the recipe it is important to sift the ingredients so they’ll be airy and will be easy to mix. Another tip is to mix well the oil, with the vinegar and the water, it will help to spread the vinegar that will activate the baking powder. Also, as last tip, is to let it cool well, because it is fragile and might break.

Vegan Pear and Chocolate Cake
- 1 1/2 cup of pastry flour
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 tablespoons cacao powder or carob powder
- 3.5 oz of vegan 70% dark chocolate
- 3/4 cup of warm water
- 1/2 cup of sunflower seed oil or other neutral oil
- 2 tablespoons of white vinegar or lemon juice
- 4 pears
