This burgers are easy to make and protein rich, 0.3 oz per 3.5 oz of boiled beans. They taste delicious and their rich texture will satisfy non-vegan alike. We coated them with corn meal to make them more crispy on the outside.

Another thing to mention is that the preparation time includes the time it took us to boil the beans, yet you can shorten this time by soaking them overnight or if you use canned beans skip the boiling altogether. Ingredients

For the burger:
  • 12 oz of dry kidney beans or 24 oz of canned beans
  • 2 garlic cloves
  • 7 oz of crushed tomatoes
  • 1 chopped onion
  • 1 teaspoon oregano
  • 5 tablespoons of cornmeal
  • 2 tablespoons vegetable oil

Preparation

Step 1 First if using dry beans, put them to boil. It may take between 1 and 2 hours. It depends largely on how old they are, the older, the drier and the more time needed to cook them.
Step 2 Chop the onion and the garlic cloves. Crush the peeled tomatoes or cut them in small pieces
Step 3Then, sautee the onion. Once translucent, add the garlic and after one minute add the tomatoes.
Step 4 Drain the beans but keep the water. It can be used for soups or stews, it adds a little of the beans flavor.
Step 5 In a food processor add 3/4 of the kidney beans and the sauteed vegetables. Pulse until a dough is formed. Let it cool. Chop the rest of the kidney beans in small chunks and add to the dough.
Step 6 Once is cool enough to touch, take small pieces of the dough and shape them like burgers. You can use a burger press or just make a ball and flatten it with your hand.
Step 7 Then coat each side of the burger with cornmeal. I just spread it on top and then flip it and do the same on the other side.
Step 8 In a pan, pour one tablespoon of oil and cook the burgers on both sides.
Step 9 Assembly: Make them into sandwiches! Cut the bread lengthwise, put the burger on top of the lower half, spread one tablespoon Ajvar on the burger, cover with one lettuce leave and top it with the top half.
