Simple Vegan Tomato Sauce

This simple tomato sauce is ideal if you are in a hurry since it can be ready in 20 minutes.

With very few ingredients and little cooking time this sauce can be ready in no time and with a lot of flavor. It is ideal for eating with some pasta, like our Vegan Egg Pasta.

Ingredients

  • 2.2 lb of tomatoes
  • 2 garlic cloves
  • 1 onion
  • Olive oil
  • 1 tablespoon of smoked paprika
  • 1 teaspoon of thyme
  • 1 teaspoon of oregano
  • 1/2 teaspoon of rosemary
  • 1/2 teaspoon of dill
  • 1 teaspoon of vegetable stock powder
  • salt
Simple Tomato Sauce

Preparation

Step 1 Mince the onion and garlic cloves.
Step 2 Diced the tomatoes (if you have time you can remove the peel from the tomatoes before dicing).
Step 3 Use the vegetable stock powder to prepare 1 cup of stock and set aside.
Step 4 Sautee the onion on a pan slightly oiled with olive oil until no more translucent.
Step 5 Add the garlic and continue to sautee for a minute. Add salt and smoked paprika.
Step 6 Add the stock and the tomatoes. Add the herb mix (you can use your own).
Step 7 Let it simmer for 15 minutes or until the sauce has acquired the desired texture.

Notes:

  • If you have time you can remove the peel from the tomatoes and the sauce will have a better texture.
  • We serve our Vegan Egg Pasta with this sauce.
