My daughter loves eating peanuts so peanut butter is a good way to add it without it being the only thing she eats. We spread it on top of homemade sourdough bread (see recipe here) or on top of apple slices. But here it is not readily available, it is expensive and loaded with chemicals with makes me believe that it might not be so healthy after all. And the sugar amount is way too high!

I also use this peanut butter to make peanut milk, it tastes great and she likes it more than almond milk. The procedure is the same, you can check the steps here! It does have a strong peanut flavor which works really well with some breads recipes, pancakes and cakes!

Preparation

Step 1 Preheat the oven to low temperature, 350 F.
Step 2 In a baking pan, spread the peanuts evenly.
Step 3 Toast for 15 minutes to help release the natural oils.
Step 4 While still hot, put them a food processor and pulse until it looks creamy. You might need to rest if the machine starts getting to hot, some 5 minutes and then continue. Also to push down the peanuts that stick to the sides with the help of a spatula.
Step 5 Store in a sterilized jar and keep refrigerated. Put it in the fridge once it has cooled. It will last up to 3 months.
