This recipe belongs to my list of candied nuts! I already posted the recipe for candied almonds (see here) . The issue with Sunflower seeds is that they are small so you can eat a ton of them and don’t even notice it! They taste somewhat buttery and the sugar add a sweet taste and the crunchy texture. It does take a lot of stirring but not too much time to make them. I used raw sunflower seeds, not toasted because they are going to get toasted in the process of candying them.

You only need 4 ingredients and you can store them for many months, but to be honest, I know no person who could resist the temptation to eat them straight away!

Candied Sunflower Seeds

Ingredients

  • 1/2 cup of water
  • 1 cup of sugar
  • 1 cup of sunflower seeds
  • 1 tablespoon of vanilla extract

Preparation

Step 1 In a big pan, add the water, the sugar and the sunflower seeds.
Step 2 Cook, always stirring until a thick syrup forms.
Step 3 At this point, remove from the burner and add the vanilla extract.
Step 4 Continue stirring until the sugar crystallizes. It take several minutes. The sugar has crystallized once it is whiteish and covering the seeds.
Step 5 Once cold, place on the burner again until the sugar makes a caramel that covers the sunflower seeds. This time do not stir constantly. Instead, stir and let it rest for 2 or 3 minutes, then stir again. Proceed this way until the sugar is golden.
Step 6 Spread on a baking tray and let them cool before eating.

Notes:

  • Store in an airtight container.
