I love eating candies. The problem is that most candy wrappers are not recyclable and the colorants used are sometimes animal-based. So it is a matter of conscious that brought me to try alternatives, by now it is clear that I have an obsession with candied fruits (orange, lemon, watermelon, kumquats). To be honest, candied almonds and other nuts are typical at dessert tables during Christmas here in Argentina.
So, half tradition and half filling a hole in my heart. It is a delicious confection on its own but you could also used it in other recipes, for example chop them and spread on top of ice cream. Be creative!
The recipe is not complicated at all, but it does take a lot of stirring. Lots. But the rest is easy, you can even halve the recipe or double it easily. The measurement I’m using is one cup, so just adjust it as needed.

- 1/2 cup water
- 1 cup sugar
- 1 cup almonds
- 1 tablespoon vanilla extract
